Cold distillation is an unconventional distillation method reducing the overall distillation pressure thereby reducing the temperatures required to evaporate the alcohol. At Durbanville Distillery manage to reduce the pressure by such a significant margin it allows us to distil our spirits off at a remarkable 56C lower than similar conventional distillations. This method is technically a bit more challenging than conventional methods.

Cold distillation leaves the structure of botanical molecules unchanged, retaining their natural flavours and aromas which would otherwise be boiled and altered by traditional distillation.
The result is a smooth, rounded spirit which carries the character of the ingredients used to chisel from.
